ROTW: Chicken Enchilada Pasta

This weeks installment is Chicken Enchilada Pasta! This was so so so yummy! Very easy to make also. Here's what you need:

1 box Penne Pasta, or what ever you have is fine
1/2 an onion, diced
1/2 red pepper, diced
2 cans green chile enchilada sauce
2/3 cup red enchilada sauce
1 can green chile's
2 tsp chili powder
1 tsp cumin
1 cup sour cream
2 cups shredded cheese
@2 cups shredded chicken (more less depending on what you have on hand...I had about 1.5 cups here

Optional, whatever veggie you have on hand for garnish, green onion, tomatoes, and sour cream for the top as well...


 Make your pasta how you like it, al dente or soft, up to you...
Saute up the onion and red pepper in some EVOO or butter.
Add to the onions, the enchilada sauces and green chile' and the spices, cook about ten minutes on medium heat.
Add in your sour cream  and chicken, stir well to incorporate, then add cheese, stir to incorporate.
Stir in your pasta and serve with the optional ingredients.
This was very yummy, kids even liked it, The husband approved as well!

  2. Thank you for this recipe. I tried it last night and it was a hit. I thought there would be leftovers for today, but it was gone when I got home from work. My husband and two teenagers loved it.
